  • 2 pt.

    (4 cups) blueberries

  • 1 tbsp.

    fresh lemon juice

  • 1 tbsp.

    chopped fresh thyme

  • 1 1/2 c.

    sugar

Directions

  • Step 1Combine blueberries, lemon juice, thyme, and sugar in a medium saucepan. Bring to a boil over medium-high heat, stirring frequently. Reduce heat and simmer, stirring occasionally, just until blueberries begin to pop, mixture thickens, and until temperature on an instant read thermometer reads 220°F, 10 to 15 minutes. 
  • Step 2Cool to room temperature then transfer to a pint jar. Refrigerate up to 1 week.
